Best recipes with Saffron

Does anyone have good recipes for Saffron? I bought some a little while back and I'm looking for good recipes to use this with.

Use it with basmati rice
Also good with risotto

Mixing into mashed potatoes is a nice touch, as well.

Only thing I've ever done with it is make saffron risotto and put a large piece of ossobuco ontop of it.

You could make a saffron buerre blanc sauce and put it on pan sauteed fish or make a cream sauce using it for chicken or pasta. You can look up some Indian or Spanish recipes using it. Paella is a good one.

Saffron Ice Cream:
Did this recipe and was fantastic. Was never doing it again because it was also fantastically expensive then I realized I bought and used TWICE the amount of saffron it called for!
