Smoked chicken in gumbo?

Anybody done this?

I usually make a stock with a whole bird, then pull the chicken and add it at the end. Thoughts?

Not a fan of duck, a little gamey for me and mine. I'll try the smoked chicken though.

Chicken, deer sausage, shrimp, crawfish and crab. Plenty of times.

Absolutely. I'm just careful with the smoked sausage I pick if I'm using smoked chicken. I don't want the smoke flavor to overpower everything else.

Personally, it's too smoky for my tastes. I believe that nothing in a gumbo is more important than the right sausage. I'm not going to change my gumbo to use a less smoky sausage just to say I used smoked chicken. I have had some pretty decent gumbos from others that use smoked chicken, though.

It's not like you waltzed in here threatening to put tomatoes in there.
