Let's hear your Christmas Day Menu

I've been preparing my Christmas Dinner since 3:00 this afternoon. As I sit here and wait for a few things to cook I would like to see what others are cooking for Christmas. My menu is:

Seafood Gumbo
Root beer glazed ham
Stuffed bell peppers
Sweet potato casserole
Spinach artichoke casserole
Mac-n-cheese
Italian cream cake
Lemon tarts

Come Friday for Boxing Day.

Roasted tenderloin of beef
Grillades
Cheese grits
Spinach madeline
Mirliton casserole
Pate' and cheese plate
Tomato sauté with onions, garlic, balsamic vinegar and basil.
Pecan pie ala mode with homemade chocolate sauce

Bourbon milk punches and a ton of cabernet.

Ok. Menu.
App : deer backstrap wrapped with bacon and stuffed with cream cheese. Assorted cheese and crackers.
Soup: seafood couvillion
Salad: mixed greens with crasins pecans and goat cheese
Entree: roast tenderloin of beef
Sides: asparagus, spinach augratin, and Brubant potatoes
Dessert: praline cheesecake

Going to in-laws so it's; tasteless, bland, turkey, mashed potatoes and this nasty-watery broccoli concoction. Seriously, the worst food ever. My mother-in-law hates to cook but insists on having Christmas.

Arrive in midtown, hit up Rudy's Bar 9th Ave @ 44th for cheap draft and free hot dogs. Ho Ho Ho

I feel your pain brother. My mother inaw would rather donate a kidney than cook but insists on having major holidays at her home. I always make sure I'm full before I get there.

Tomorrows menu:
Fried turkey
Glazed ham
Rice dressing
Mac n cheese
Sweet potato casserole
Potato salad
Some type of salad
Mississippi mud pie
Lemon icebox pie

Pretty standard fare but it's the food I love an associate with holidays.

Had three speckle belly geese given to me today.

Browned all three with oil and flour.
Put one in with my greens and the other two in a roasting pot to make traditional grilliades.

Bought some corn grits from Zea.

We cooked tonight, it's to my sister's tomorrow for brisket.


Cooked a turkey, zucchini casserole, mashed potatoes, sweet potato casserole with some marshmallows on top, corn, rice dressing, stuffing.

Big gravy boat.


I only took pics of the turkey and the zucchini casserole but it was all so awesome.

Just messing with you, Otis.



In this one, I sliced up 6 zucchini, boiled the slices just for a little bit to get them soft, drained and rinsed with cool water.


In a skillet, I I browned about a whole medium sized onion, diced, in about 3 T of butter, just until they get translucent.


Then I added some diced tomatoes, I used roma tomatoes, just rinsed all the seeds out after I diced them. Add those once the onions are translucent.

Add a the sliced zucchini, a T of thyme, and 2 T of AP flour. Stir until the white flour disappears (so everything is coated with flour). Remove from heat.

In a separate bowl, whisk two eggs, 1/2 cup of half and half (I used 2% milk), salt and pepper to taste and a T of brown sugar.


Whisk that all together.


In a sprayed casserole dish, add the zucchini/tomato mix just to coat most of the bottom.

I then added fresh shredded parmesan cheese to top that. (Sort of like you'd do with spaghetti sauce and lasagna noodles).

Then added the rest of the zucchini, topped with more shredded cheese.

Pour the egg mixture over it all. Top with sliced green onions.

Put in the oven at 350° for ~25 min, until the cheese starts to brown and bubble.




Really easy.
