help choosing some pots and pans

I am in need of new pots and pans. I was wondering if any of you could give me some advice or tell me your favorite brand for pots and pans?

Also what you would recommend buying (i.e. sauce pan (medium/small) nonstick or stainless or both; wok nonstick?, saute pan.... and so on)

I need both stainless & nonstick or hard-anodized materials if it is better thand stainless.

I want to be able to have to option to put the pans in the oven max would be 400. I would like a flat surface (no ridges). Would like to use the dishwasher most of the time and not handwash and dry. The handles I would love an easy grip, stays cool on the stove, love the silicone handles, but I know that might not be the best for the oven.

I've been picking up pieces of All Clad copper core stuff in their 2nds sales and they are fine items.

If you want the dishwasher, go with All-Clad stainless. High quality. I have an All-clad set and about 7 or 8 Le Creuset pieces that I love. The Le Creuset cook more evenly than the All Clad and are less likely to burn the bottom. They are really heavy and you have to handwash, although they are really easy to clean.

I would buy seconds at an outlet as they are significantly cheaper and carry the same warranty on the porcelain coated enamel.

What's your budget?? All-Clad Stainless is nice stuff but if you need something more basic go to Sam's and buy a set of stainless cookware. For non-stick the cheapest places will be restaurant supply stores. If you want to spend some money, there's plenty of name brands to spend it on. I'm not a fan of hard-anodized. The anodized stuff I had wasn't dishwasher safe and it didn't cook as well as my cheap stainless.

+1 on the All Clad stainless. I have several of the MC2 line...the exterior is a dull, brushed finish (rather than the glossy/shiny of the newer AC lines). I routinely dishwash; the only ill effect has been darkening of the exterior (I don't care about that). A 1.5 qt saucepan, a 2 qt saucepan, and a 3.5/4 qt will take care of just about every cooking task. Add a 8 qt stockpot as your budget allows.

I'm a LeCreuset fan as well, but it's 1)stupidly expensive unless you shop outlet/clearance and 2)very heavy. Cooks like a dream for anything needing consistent heat or for oven braising.

I don't really believe in buying sets. I have some Magnalite, some non-stick from Sam's, a stainless steel saute pan from Tuesday Morning and a 3 qt saucepan from Martha Stewart. And then there's the essential cast iron skillets.

Total budget would be around $900. I am okay with buying each item as needed. I am asking for any help on which pans and pots for which.

If that is your budget, go with All Clad. Get one of their box sets and a few saucepans to go along with it. If you have some extra leftover, get a nice 8-12 qt stock pot.

I have a set similar to this:

The only thing I need to buy are a few smaller sauce pots (1qt-2qt or so) and a large stock pot.

+1 on some good cast iron. Get a nice pan and a dutch oven for soups, gumbos etc.

I've heard there are some cheaper all clad pots out there that are made in China and aren't as good quality (like Emeril branded or something?) I can't speak to that, but it may be something to consider or do more research on.

Do you have a gas cooktop or an electric?

For $900 I would get a

12 quart cast iron enamel coated for $80-100

Basic 12" Teflon coated nonstick pan in the $20 range from Wal-Mart...... they all chip.... get the heaviest one and replace in 2 years

A stainless steel 12" skillet, spend a little money on this, they tend t0 last a while. Under $50

A smallish anondized aluminum pot 2-4 quarts to heat left overs and cook vegetables. Under $30 with the lid...... buy 2

A nice size SAUCE pot 1/4" anondized aluminum. Think WINCO with welded handles pro model .....under $50 for a 15 quart.

^^the All Clad set linked above is a good deal. The MC2 line is a few years old, so it's no longer carried at Williams Sonoma or Sur La Table. I have several pots from this line & they are great. The largest pot--the 8 qt stockpot--is a good size for a gumbo pot.

To this set, I'd add a couple of ScanPan nonstick skillets (8" for eggs, 10 or 12 for sauteeing).

If you do lots of steaming, you can buy a steamer insert to fit the 3 quart saucepan.

You can get a 10 or 14 quart Magnalite pot on Amazon for $80-85 each.

I just bought a Daily Chef 12' Teflon pan from SAMs



I love it. The long handle gives me great agility on a flip and it's roomy.

Plus I'm pretty sure I could kill someone with it. It's my new general use pan.

Other than that I love well seasoned black iron.

Did Sam's get rid of the Bakers and Chefs Brand? That's what I bought there the last few times I bought teflon.
