You want something with some good grain, and it needs to be dried and stable or it will warp...

She don't want cypress but we may go with it because it's easy to get.

Yeah definitely want kiln dried and would prefer 3x's

Do you have a planer and jointer? Makes finding rough sawn wood cheaper and easier.

Walnut would be easier and cheaper.

Cherry is expensive. Know nothing about black gum.

FYI - those really aren't considered "exotic" woods.
Wenge, cocobola, etc are imported exotics
Acadiana Hardwoods in Ponchatoula should have all of those woods and more in stock.
