WTF? N.O. restaurants can't open their doors fast enough it seems. And most are doing okay from what I hear.

i will say that the restaurant business is probably the worst most thankless business to be successful in. Unless you get as big as a guy like Besh, Lagasse, and the like that can launch books and cookware lines. The others make money, but it isn't that great, or as great as you want it to be. It's always going to be the sweat on your back making the money.
Obamacare probably hits these businesses the hardest. It requires the most workers and the lowest profit margins. Making the companies afford health care for them is really not fair. If anything, pay them a living wage, and let tipping be and only in addition to type of thing.

I interpret this as he's not going anywhere. He will stay in the markets he's in and maintain the same level of quality as long as he can.
