I can make great boiled crawfish and crabs, but I cannot seem to make good boiled shrimp. I like them spicy and a bit salty. HELP!

Overseason the crap out of your water. Real spicy and salty. Bring water to boil, put in shrimp, leave the burner blasting for 1 minute(you should start seeing the shrimp roll in the water), turn off the burner and leave it alone for about a minute(a few shrimp should start floating to the top). Add in some ice to cool it down and soak for 15 minutes. Start testing them after 10. If they're not salty enough you didn't have enough salt in them in the 1st place. They should peel easily though.

Ask 10 different people they'll tell you 10 different ways. Good luck

From an earlier post of mine. I'll be doing this with three pounds of 12-15 count , head on, tonight.
I use only enough liquid to cover the shrimp. @ 3 parts water , one part vinegar. A little fresh lemon, garlic and Zats liquid and dry seasoning to suit my taste, bringing to a roll before the shrimp go in, and cooked as above.

I may be weird, but I look at the shrimp. I stir them a little once in the water to insure even cooking and once they are pink, I ice them enough to get the water to a hot/warm temp...below cooking stage. Soak until they taste right. The key is color for me.

Like Trout Bandit said, get your water very spicy.
I prefer to boil headless shrimp, and I bring the water to a rolling boil, then add shrimp, stir them and watch closely. When the shell begins to separate from the meat, remove the shrimp immediately. Then add enough ice to cool the water enough that you can put your finger in it without burning. I then put the shrimp back in for 10-20 minutes depending on how spicy they get. Just taste one or two every few minutes until the desired spiciness is achieved.
Good luck

What Otis said
But one tip I will throw in
Size Matters (TWSS)
Start taste testing the smallest ones you can find and don't let them overcook.
Under seasoned > overcooked

Use 2 pots. Boil in plain water. Soak in seasoned water. It's fool proof.

On average, boiled headless shrimp are going to peel better than head on shrimp. It has to do with the way the shrimp was caught and stored.

I find the same thing. I catch my own and I also find the head-on shrimp peel better if I keep them on ice for several days before boiling.

If you want even spicier, add Zatarain's liquid at soak. Trout Bandit I thought I taught you that?

Run the shrimp under cold water for 5 mins before you boil them. Never have issues peeling them again. LINK

Well I'll be damned. Never heard of that.
