Peanut Butter Pie

Being Father's Day and unofficially NOT having to cook today I wanted to do something so I whipped up one of my favorites. Peanut Butter Pie!

I actually started it yesterday so that it would have time to chill and set up.

The crust which is crushed chocolate cookies mixed with peanut butter and baked.



Filling made and ready to chill.



Grated chocolate on top and it's done!
Each slice will get a drizzle of Dulce de Leche Caramel.

My wife makes one that she got from my mother that is this basic recipe. She uses a graham cracker crust instead which I prefer. Delicious.

The recipe is from emerils.com

Enjoy! I know we did. Oh, I made mine with double the amount of filling and I grated chocolate on top.

I had another slice of that pie for dessert last night. Delicious! Oh, also two brownies from the batch my daughter made too.

Here's mine. I froze some chocolate covered peanuts and ground them up for the garnish on top.
