I made eggs benedict yesterday for the first time

Made a simple hollandaise sauce, 4 egg yolks whisked with half a lemon (1 tbsp) until doubled, then warmed over a sauce pot with simmering water with a melted stick of butter drizzled in until doubled.

We cooked out porterhouse steaks the night before and had one and half left over so I sliced them thin warmed them in skillet and set it on top of a holandaise sauce covered toasted english muffin.

I boiled 2 qts of water in a 3 qt sauce pot with 3 tbsp of Vinegar, swirled the water and poached 4 eggs.

Placed them on top covered with more hollandaise, and viola.

I didn't take pictures, but it looked honestly like this minus the green garnish:



What can I do to improve the recipe? Anything? It seems pretty basic.

I didn't butter the muffin.

I thought a stick of butter between two people was enough

I know, I spent the night at my SO's parents house because her ailing grandmother is in town this week.

They had everything I needed on hand so I say why not.

It was surprisingly easy.

Now my girl wants it every weekend

I like a little bit of worchestire and crystal hot sauce in my hollandaise, but sounds like youve got it down.

She thinks the tomato salsa at Chipotle is spicy so I only added salt and pepper to the sauce


But I added jalepeno sauce to the top of mine, it was awesome.

The flavor of the hollandaise was really good, we usually get brunch on Sundays and it tasted just as good as anything I've ever paid for.

Looks delicious. I add a touch of cayenne to the hollandaise. Otherwise, I enjoy eggs benedict in the traditional manner without a lot of added flavors. It's so good as is, but I think hollandaise would make cardboard palatable.

Yeah I was going to add it but she doesn't like any heat at all.

I'll add it to mine after I put it on hers next time

It doesn't need much and it's very good without it. I prefer it incorporated.

You do not need to use a double boiler to make hollandaise, in fact, it is quicker and easier if you don't. Also, it will come out fine if there is some egg white in it.

I make it in a blender and hold it in a thermal pitcher I use for hollandaise and buerre blanc sauces when I make a lot and want to make it a bit early.

Nah. I have a dishwasher. Takes no time in the blender.

Butter your muffin

I use a thermal pitcher as well which allows you to make ahead for when you have a group.
