I think square root is a brilliant concept. Studies show when you pay for things up front then consume later, you have much higher levels of satisfaction.
the food is undoubtedly great but the fact that you have already paid and have no bill at the end of the night just tops it off. If I ever go I would definitely do the drink pairing too. Just have everything paid in full ready to enjoy the experience.

Unfortunately, the drink tab comes after the meal, and was actually more than the food.
