Well, as a native Lousianian, I'm ashamed to say that I tried these for the first time ever this past weekend, and holy shite I think I found a new favorite fried appetizer. What are yalls thoughts on these?

Yep and they're glorious.

Lots of fat, but who cares.

We eat them after boils, but it's not the face like the ebi in sushi restaurants.

We start with these:

Then eat normally and pull the shell off of the heads, leaving the spider. Shake in some fish batter and fry, dropped the garlic in as well. Effing glorious.

Ebi as served at a sushi joint. This isn't stuffed or anything, just the head and funky goodness within.

Gaston, fry the whole damn head. The carapace gets crispy and is too good to waste.

I never tried that but I have gotten soft shell shrimp a few times lately and it's excellent.

Love spiders. Fried, crispy, shrimpy goodness. It's the perfect pre-boil munchie. No boil is complete without a fryer cranking out spiders, frog legs, meat pies, gator bites and catfish nuggets prior to the main attraction.
