cooking a pork belly

I have a pork belly that I want to cook. I don't want to make bacon right now. Any recipes or helpful tips would be appreciated.

Braise it in chicken stock, covered in the oven until tender. Remove it and let it cool. Cut into slabs about 3/4" thick. Season the slabs and grill.

Thanks for the info. I ate the pork belly sandwich at Cochon butcher last Sunday. It was very good. I had the belly in the freezer. Didn't know if it would turn out just throwing it on the smoker when I'm cooking ribs and butts next weekend.

Take your belly and season it generously with salt, red pepper, orange zest, fennel and whatever you might like. Then wrap the belly around a pork loin. Put some baking soda on belly skim

Good luck, when I made one it was so fatty I couldn't stomach it. If I ever get another one it will be for bacon or cracklins only
