Too Big For the Stovetop?

Thinking about getting this, but I want it only if I'd be able to use it on the stove to make jambalaya.

It says it's 17in x 17in x 8in. Is a 3 gallon flat-bottomed dutch oven too big?

Damn that is pretty big. I have a skillet that is probably that big and it works on my gas range well enough. i admit, I don't use if often.

Yeah, I don't see it being a problem for gumbo or chili. I was wondering if anybody uses one of these for jambalaya.

Estimating, the bottom is only about 13 or so inches. It's fine on one burner, not that much different than a 12" skillet.

I have a 12 qt LC, it works on the stovetop just fine. the CI will spread the heat out across the bottom fairly evenly, so I wouldn't worry too much about it hanging over past the burner's edges.

I do. Have 2 No 12's that I use...but I bake my jams in the over after starting them on the stovetop.

Baking would be a good solution. At what point do you put it in the oven, after the rice plumps up a bit?
