Probably any of the nicer butcher shops.
Butcher, Rest. Depot, Cleaver, Rare Cuts, even Dorginacs carries it. Possibly Rouses.

Butcher,

I've bought them from here. They sell them in cryovac packs from another distributor. I can't remember who it is, though.

They're good.

Is it called the kidney loin? I had kidney loin recently off of an elk cow and it reminded me of a hanger.

The press to judge the 'doneness' doesn't work well on that cut, it was like touching a boob at medium rare. Mmmm boobs.

HA! I was reading a post on here about La Boca and I've been ( a year ago) and it reminded me, "shite, I need to get that cut of meat again.!"

La Boca also makes skirt steaks really really well. That's an easy cut to find and prep up for the grill. Rare with a chimichurri, cut thin for the win.

It looks like he was asking for some that he could by and do on his own, but I was coming to post La Boca as well.
