Billy's vs Dons Boudin and cracklins

In a side by side comparison today, Billy's won both categories. This was regular boudin vs regular boudin. In the interest of full disclosure, Billy's cracklins were salted and dons appeared to be "seasoned". Salted have always been better to me.

That was a close competition however and it was completely worth the two weeks of my life that I gave up to eat that stuff!!

I'm just not a fan of Dons. Just doesn't have the flavor profile I like if that makes sense.

Do a Billy vs Bourques next time. Ive hauled them to 3 different camps and Bourques is 3-0.

For me, Bourques and Billy's are both top notch...Bourques gets the edge by a nose.

The smoked Billy's is my favorite boudin. Not everyone does smoked, but man is it good. I admit I never get the plain Billy's, but why would I? The smoked is great. I bought some plain Billy's cold and tried to smoke it, and it didn't come out as good as what you get right there at the store.

Billy's has both seasoned or salted. I'm with you on the salted only preference.

A good cracklin' is good, salted or seasoned, but I'll buy seasoned more often than not.

No. I've grilled it, but I like the regular so much I've never bought the smoked.

Try it. I think he smokes with pecan, but I'm not sure. I tried smoking it with oak, but it was nowhere near as good. Whatever wood they use, it's perfect. Grab a couple of links of smoked and a couple of pepper jack boudin balls. Trust me...game changer....

I'll get some smoked to try, but I'm not a boudin ball fan...purist here...got to have boundaries .

My oldest is a boudin ball fan. I 'll leave that pleasure to him. I'm a boudin fan...big time.

Try the smoked. The casing is "snappy" and the smoke gives it a great flavor. You won't go back to steamed boudin. However, it's not "pure"......
