I don't typically cook w/ hot sauce, but instead use it more as a condiment.

For cooking, I usually use pepper flakes, cayenne pepper, etc. if I want to add heat. The only time I use it when cooking is jambalaya and when making my sauce for redfish on the halfshell.

Do you use hot sauce while cooking? What sauce? What dishes? etc.

I use Sriracha in my bbq sauce. Other than that no, I don't cook with hot sauce. Don't really use it on a condiment either. Except on poboys.

I put some in my chili when making it but not so much that others wouldn't like the heat.

I will use it as a last minute addition if needed. Mostly use it as a condiment and mostly use Sriracha.

I'm not a big fan of the flavor. I'd rather use dry cayenne for heat.

I don't like hot sauce other than Mexican hot sauce in moderation. And even that is meh.

Sure do. I like Tabasco in gumbo--sometimes the vinegar's acidity adds a needed brightness to the dish. Ditto for red beans and white beans. I use Crystal as a marinade for my hot wings.

It's a finishing touch for my stir fries. Yesterday I made stir fry pork with the usual veggies...carrots, celery, garlic, onion, bamboo shoots, snow peas, water chestnuts. Then poured a mix of chili sauce and sweet n sour sauce.

I'm a label reader. Some hot sauces deliver too much salt and you're gonna get up all night drinking water.

Use it in fried chicken.
Dredge chicken in
1.5 cups hot sauce
3 eggs
1/4 cup water

Seasoned flour then fry

Most other things use as a condiment

Yes, I cook with it. Same reasons hungryone cited. If I want a cayenne flavor in a dish that would benefit from a bit of vinegar, I use hot sauce rather than cayenne. I don't normally cook it IN my gumbo, but I sometimes add it to the bowl. I cook with it in red beans and other beans. Can't think of any other dishes right now.

The only time I use it while cooking is when I cook a chicken and andouille gumbo. I don't use much though, just a few splashes in the pot while it is simmering.

Other than that, I use it as a condiment. I love it on eggs, red beans, white beans, pot roast, jambalaya, etc.

A few splashes in gumbo or beans. Also, always a couple of squirts in my scrambled eggs
