grilled sausage for gumbo?

Making chicken/sausage gumbo for tailgate pre-party tomorrow night. Will be grilling ribeyes tonight, thinking of throwing some sausage on too, then use it for gumbo. What say you gumbo experts?

I've started doing that lately. I slice it up first and do it in a grill pan to maximize the grill flavor.

I used sausage I had smoked in my last gumbo. It was amazing! Flavor was really good!

Will be good. For NFL draft, we usually do a gumbo on day 3 to throw all the left overs in; good way to utilize them.

i normally give a light char on the sausage in the same pan that i cook the trinity in.
mark the sausage, remove and drain. the pot should have some little burned sausage bits in the bottom. the trinity should clean all this up. i put the sausage back in after the trinity and stock has already been back to the trinity.

I'm no expert but i've also been smoking mine prior to making Gumbo or red beans, it renders some extra fat out of it while putting that smoke taste into it, win win

If you have a smoker, smoke your chicken! It makes the best gumbo!

I like smoked meats in gumbo, but do not care for grilled meats in gumbo.

Agreed. There can be too much smoke flavor in sausage going into a gumbo.

Do it every time now. Slice it thin, grill it on a flat skillet, put it in the gumbo. To me, it gives it a better flavor, plus I like to know my sausage is cooked thoroughly.
