Pulled Chicken Tacos, Homemade Salsa and Cilantro Aoili (Pics!)

Fired up the WSM today. Made some pulled chicken tacos and homemade salsa.
Here's the homemade salsa:
Two cans of petite diced tomatoes. Drained one can and food processed it, the other can I dumped in as is with juices.
All ingredients in. Minced garlic, chopped cilantro, diced red onions, salt, pepper, lime juice, lemon juice and of course some jalapeños.
It was a little heavy on the cilantro and I should of chopped it finer but still came out excellent.
Got the WSM going. Took the chicken off the bbq at a breast reading temp of 162. Things were reading at about 170.
Wrapped in foil and rested for 30 minutes.
Pulled! Smoked it with apple and hickory also.
Before that though I was caramelizing some onions. This was very early so they did get nice and brown. Couldn't snap a pic of the finished onions.
And here's the final product. Flour tortilla (frick the haters and my parents like them). Pulled chicken with caramelized onions, salsa, and cilantro aoili. Oh yeah and fresh cilantro.

Looks awesome. I prefer fresh tomatoes in my salsa and like you said, corn tortillas. Regardless, i would tear that up. I love smoked chicken.

I've never used fresh ones. Ill have to try them. It comes out pretty solid with can tomatoes but oh well.

I'd eat em and I like flour tortillas as well.
