Ideas for a Kentucky Derby party?

The wife and I are hosting a Kentucky Derby party on Saturday and I am looking for a few suggestions. I will be making mint juleps in silver cups as well as Pimm's cups for people who want something lighter.
Since it is in the afternoon, we don't want to serve a meal, but we would like some light food/snacks for the guests. I also plan to buy a box of cigars for the gentlemen.
Any other suggestions?

Cinco is the next day, maybe go a Mexican side theme with nachos or fajitas, or try and find some horse meat

To make things a little more special, try to see about making your own simple syrup for the juleps and having nice fresh mint. If you can get your hands on that small pellet like ice, it works best.
The note above about possibly combining some Mexican might be a good idea depending on your crew.
Cheese and crackers, etc are a must. Maybe one of those nice brie set ups.
You can also do one of two betting things to keep it fun.
1. Anyone who wants to bet can put up $5 and their name gets put in a hat. After getting the required number of entries, draw names out of hat for horses. Winning horse takes pot.
Can make chart with horses in each block and let people put up $5 and put their name on the block with the horse they pick. Winner(or winners) take pot.

I honestly don't remember much of what I ate last year when I went to the derby. The only thing that comes to mind is a lobster roll they had at concessions but probably isn't related to the area.

wife and i host a derby party every year; one of my favorites of the annual parties we do.
we've made bourbon balls a few times, as well as a bourbon pecan pie that was a big hit. this year, i think we are attempting these: bourbon chocolate chip cookies.
we, of course, do mint juleps--have a bed of mint growing in the backyard, and we make our own mint infused simple syrup.
as someone else noted, you can do a cinco de mayo food theme--we've done that several times given the close proximity of events. this year, i think i'm throwing a pork shoulder in the slow cooker...i'll dump a bunch of corn tortillas and condiments on the counter. people can serve themselves at their leisure, and i can easily freeze the leftovers (because, as you point out, the afternoon event may not generate strong appetites).
if you are looking for something to generate interest for the actual race, we always put all the horse names in a bucket. right before the race, we have everyone draw a name. we usually have prize baskets for the first and second place finishers...this year, i ordered some stuff from Makers Mark to stuff in the prize bags.

I love to pretend to be a bartender and will be making mint juleps from scratch. I really don't feel like smashing a bunch of ice....where can I get the rabbit ice?
Also plan to check party city for some plastic silver cups.

and have a derby pool....1 to 20 on a piece of paper...shake em up...pull em out...$5 per pull...winner take all

Sonic will sell it to you by the bag. Keeps fine in the freezer if you don't let it thaw too much before you get it home.
