What is Your Pancake Recipe?

made some this morning. only had whole wheat flour. used a 1/2 cup, 2 egg whites, about a 1/4 cup milk. dash of cinnamon and vanilla extract. came out pretty good. not bisquick good but still legit. topped w/ strawberries, syrup and mackay's jam.

1 cup unbleached AP flour
2 tsp. sugar
2 tsp. baking powder
1/4 tsp. salt
1/2 stk butter
1 lg. egg
1/2 tsp. vanilla ex
1 cup milk

whisk dry ingredints.
whisk wet ingredients then add melted butter.
whisk it all together, just to mix evenly...good for waffles too.

Pancakes and French Toast ... my husband's domain. For our entire marriage I have pretended not to know how to make these. Shhhh!

First thing the Grandkids say when they show up is

"PaPa, can we have pancakes and bacon for breakfast tomorrow?"

I make "silverdollar" pancakes (3" diameter) They eat them as fast as I make them. Eventually I do get them filled.

I like to add seasonal fruit to mine. Blueberries & strawberries in Spring and Summer, but my favorite is apple cinnamon pancakes in the Fall. I add brown sugar, cinnamon, nutmeg, and very finely diced apples to the batter. They're good enough to eat dry with a little butter, but a good maple syrup is excellent on them.

I wished someone had crawfords 2 recipe on starring for pancakes... those are the best ive ever eaten anytime anywhere.

Pioneer mix recipe

Add in bananas, chocolate chips, blueberries, or whatever sounds good

Dry ingredients:

2 cups AP flour
1 tsp kosher/sea salt
1 tsp granualted sugar

Sifted into bowl

Wet ingredients:

1 cup buttermilk
two eggs beaten
1 tsp pure vanilla extract

Surprise ingredient:

1 egg white beaten to medium peaks.

Add combined wet ingredients to to the dry and let rest for 15 minutes. Fold in egg whites. If you want to do blueberry pancakes a TBS of grated lemon zest sets it off. This is my grandmother's recipe and they are the best I have ever had.
