Pancakes and French Toast ... my husband's domain. For our entire marriage I have pretended not to know how to make these. Shhhh! Weekend breakfasts for son ... ask Daddy!

First thing the Grandkids say when they show up is "PaPa, can we have pancakes and bacon for breakfast tomorrow?" I make "silverdollar" pancakes (3" diameter) They eat them as fast as I make them. Eventually I do get them filled.

I like to add seasonal fruit to mine. Blueberries & strawberries in Spring and Summer, but my favorite is apple cinnamon pancakes in the Fall. I add brown sugar, cinnamon, nutmeg, and very finely diced apples to the batter. They're good enough to eat dry with a little butter, but a good maple syrup is excellent on them.

Dry ingredients: 2 cups AP flour 1 tsp kosher/sea salt 1 tsp granualted sugar Sifted into bowl Wet ingredients: 1 cup buttermilk two eggs beaten 1 tsp pure vanilla extract Surprise ingredient: 1 egg white beaten to medium peaks. Add combined wet ingredients to to the dry and let rest for 15 minutes. Fold in egg whites. If you want to do blueberry pancakes a TBS of grated lemon zest sets it off. This is my grandmother's recipe and they are the best I have ever had.
