| Fried me some eggs this morning. Tried to do the one handed crack... (Posted on 1/27/13 at 10:31 am)
the egg open into the skillet thing (skillet lol)..I wasn't successful. Also tried to wrist flip my two eggs in the skillet while cooking to make them over easy. I wasn't successful with that either. What's your egg cracking & over easy technique? Scrambled eggs are easy yo. Sorry, no pics..Don't have a cam on my cell.

I like sunny side up. It is so easy. Just have a skillet(lol)that has a top that fits. Helps to steam the whites so they are fully cooked without making the yolks overcooked.

Same here If I have to flip the egg, I'll screw it up I usually cook the sunny side up eggs pretty slowly. I like putting fresh grated parmesan or a thin slice of it on top of the eggs.

I sometimes just put my plate over the skillet to help steam the eggs.

i hold the egg in my left palm and with the edge of a metal spatula I whap the center of the egg shell essentially cutting into it. then with my thumb I push down and away the bottom half while my middle finger pulls back the upper half of the shell and release the yolk into the Skillet. For over easy I cook on medium-low heat and fold one half of the white (a "flap" so to speak) over the yolk covering it then flip the egg once.

I went to the Waffle House this morning. I guess I got there right at shift change. The night griddle boss (white, toothless) was cleaning up. The day shift griddle boss (black, ex Marine looking mofo) was handling a bunch of orders anxious for whitey to get his arse out the way. Anyway, Major Payne rattled off a machine gun like execution of one handed egg crackings. Must have cracked a dozen with expert griddle placement in less than a minute. Then in the blink of a eye he was down at the other end rescuing waffles meth head Larry had forgot about. It was impressive.

The key to flipping eggs without breaking the yolks is to have quick, soft hands. Think Marques Colston here. I grease my pan with butter, not so hot as to burn the butter, don't flip until the first side is completely cooked to your preference. Swirl the pan to get the egg moving a bit, when the egg gets to the 12 o'clock position in the pan, tilt pan down a bit, flick wrists forward and catch the egg softly. If you do it right it won't break. Try it a few times over the sink first lest you piss the wife off.

I worked at McD's when I was 16 so I mastered the one handed egg crack. Used to do one in each hand at the same time.

I think you're looking for what's called "basted" eggs. I put basted in quotation marks because you don't actually baste the eggs with a spoon, although there's nothing wrong with spooning over some bacon drippings if you're cooking with that. When it comes time to flip, skip the flip, sprinkle in a small amount of water (I've seen ice used as well) and cover until the yolks are done the way you like them. You'll have ZERO chance of busting any yolks while getting the results you're looking for in easy eggs. Ironic thing about cracking eggs for me, I can only do them one handed. If I try to use two hands I end up with a shell mess. Also with regards to shell if you're using multiple eggs in a recipe is to break each one into a small dish, then dump in with the others, that way in case you do have an accident, you haven't introduced a bunch of shell into multiple eggs.

I can crack one handed. I fried 4 over easy this morning. Butter but not too hot. I turn off the heat once I flip them. I can't do the wrist deal. Tried, but my wrist doesn't cooperate.
