What to do with chicken thighs?

I have 4 lbs of them in my freezer. I'm brining some of them now. I was thinking about cooking them on low in the cast iron. Maybe chop up these zucchini I have into thin strips and sauteing them. FYI, I'm on the Paleo diet. Any ideas?

Along with your zucchini and chicken, get some red curry paste, a can of coconut milk and some lime juice. Make a thai chicken coconut curry. Awesome stuff. Most of this is paleo friendly, I think.

I'm just use to brining all my chicken. I rarely ever mess with thighs though.

I cook thighs pretty often. I'll rub 5-spice or a cumin mixture and just grill them.

Marinate the shite out of them and grill.

Sammy's does this when catering and it is the best item they have..

Marinate in Jerk overnight. I'm talking real scotch bonnet jerk, not the crappy saucey kind. It has to be the consistency of gritty mud. Then place over low charcoal heat.
