Can I leave gumbo out on stove overnight?

Cooking a chicken and sausage gumbo for Halloween party tmw,
Was wondering if it would be ok if I left on stove overnight? TIA

Was gonna turn off. Now going to put in oven on 200 covered. Have to work tmw, that's why I cooked it tonight... Will it keep all afternoon in oven like that?

have you ever heard of the danger zone? it's a great rule of thumb that relates to anything you cook. basically you have a room-temperature window of about 2 hours where after that cooked food needs to be either above 140 degrees or below 40 degrees. anything in between after a couple of hours and you're growing bacteria.

sounds like it would turn to shite staying in the oven that long. how much longer does it have to cook? personally, if it were me, I would stay up until it's done then refrigerate it. just pour a whiskey and pop in a movie brother.

Gonna leave in oven overnight then take out in morning, let cool off then refrigerate til 3... Will reheat when I get back home and serve in evening. Thanks for the solid advice... And dammit, no bourbon left, just wine!

No. Gumbo is essentially a broth. Warm or room temperature broths are what microbiologists use to grow cultures.

Put it in the fridge.

Ahh. I thought you were done cooking.

I'm still going to suggest that you finish cooking, then quick chill it by putting the pot in an icewater bath in your sink, then toss into the fridge once it's cooled.

if it's a very large pot I'd break it up into smaller batches, then ice bath, then store in fridge

Hopefully you have been convinced not to leave it out or keep it warm all night.
