Yellow cornmeal, salt, pepper and garlic powder. Fry whole catfish at 350 until crisp.

Soak in a mixture of yellow mustard (German if you are feeling crazy)La hot sauce, and buttermilk.
I use yellow cornmeal, lemon pepper and a little salt for the batter.
I posted this awhile back.

The recipe is not always what causes failure in frying fish. Use a thermometer in your oil. Maintain your temperature by frying in small batches. Drain on a wire rack.
