Alton Brown's chicken wings... Anybody tried it?

I've got a few dozen wings that I was thinking about frying off as I normally do. Then I remembered his recipe from "Good Eats" using a steamer and then baking them at high temp in the oven..

Anybody ever tried the Brown method? My experience has been that Alton Brown is usually money, but the steamer/baking does take a bit more commitment and I wanted some opinions before diving in...

I have done it...but honestly I prefer to grill the wings and then toss them in sauce. To me that is the best way to do it.

I will even use chicken thighs and toss them in Wing sauce. Texas Pete is pretty good as a sauce.

I steamed them then fried them. They were crispy crispy!!

I have. I approve. I put the rack high with the broiler on. Came out great.

I've had mixed results with this. I like the ease of grilling, but I can't get used to the taste of char on my wings.

I like Texas Pete but I usually steer towards Frank's. Theres a new thick blend of Frank's which I'm considering using this time around.

Steaming rids of a large portion of fat/skin so when you bake them its not an oily mess and skins get crispy. I usually do not like wings but I think there are great. And Franks makes good sauce

Really like the char taste. Frying and finishing on the grill is my prefered method when not considering health.

Ewww....No char!!!!!!!!!! Char on Chicken tastes like poo.

Lower heat...longer time. No direct heat!

Man...y'all got me wanting wings. I am going to the store and firing up the grill. I am at home and I can do this before I start working later today

I've tried it and they do come out nice and crispy. Lately i have been just grilling. I think i might go to a combination of steaming and then low and slow on the grill/smoker.

here is another interesting method. Basically says to sprinkle wings with a little salt and baking powder and set out in the fridge overnight, then bake.

do them on the gas grill till they are starting to get crispy. take them off toss them in your sauce. put them back on the grill, let them finish and then when done toss them again. best shite you ever tasted.
Also, if you have a smoker.... try that. really tasty. Its kind of time consuming for wings, but when smoking a butt or something throw some wings on too.

Tried the Alton Brown steam/bake recipe tonight using Frank's Red Hot and it was a hit. Very crispy and not greasy at all. The process was pretty painless and I'll definitely do it again...

Buddy of mine owns a BBQ place here in Alabama. He smokes his in their electric smoker and then fries them quickly to crisp the skin up. They are very good.

agreed, another good thing, is fry, toss in your sauce and then put in the broiler.
