Give me a good vegetarian Dinner

GF is a vegetarian, looking for a good recipe since I am not used to cooking for one.

you can cook a lot of pasta dishes and substitute squash and zucchini for meat

for that matter, you can substitute spaghetti squash for the pasta

Saag Paneer

Grilled eggplant and mushrooms provide a "meaty" replacement

Olive oil and Cavender's greek seasoning on grilled veggies is really good. You can always do the nicer version of it with Fresh oregano, garlic, OO, salt, pepper, smoked paprika and don't forget the MSG.

most vegetarians eat fish so...

Blackened Redfish
Scallops or Trout en Papillote
Red Beans and Rice (sub stock of choice w/ a shrimp stock) and grilled shrimp on top
Side: eggplant dressing w/ crabmeat


if you really need no fish, do a red beans and rice w/ no meat. Mushrooms are a very good compromise. Oyster and Chantrelle mushrooms are my favorite for their texture and flavor

Eggplant and Squash Curry

I used butternut squash.. Not particularly a fan of Rachel Ray but this is pretty good. If your chick likes vegetarian dishes.. She will lose her mind.

Yeah, BIG difference. Even vegetarians that don't eat fish are much easier to cook for than vegans.

I switched over to a primarily vegetarian diet a month ago. These are things I've made that have been great:

spice market sweet potato and lentil packets-easy easy

Red lentil curry-half it for 2 people

Three bean chili

Sweet potato and black bean chili

Sweet hot tofu

That reminds me, my wife makes a tofu veggie lasagna that is the tits.

I've never done it, but heard you can just add some tempeh to pasta sauce.

fry a portabello mushroom cap (no fins or stem) battered with panko and asiago. fill with roasted garlic and feta cheese and put in oven to brown the cheese a little. drizzle with a balsamic reduction and serve.

Not sure the exact difference. She doesn't eat any meat or seafood. Also, no eggs (bc its a baby chicken) I've done the beans, and grilled veggies. She loves that.

I would stir fry some veggies with a Thai sauce.
Broccoli, shitake mushrooms, bean sprouts, red bell peppers, etc. Serve over rice or noodles. Some Asians throw in some hard boiled eggs for protein if they don't have meat. I've tried it with eggs and it's really good.

Falafel:
get dehydrated falafael mix at Whole Foods, add water, make patties and fry. Get Pitas, hummus, tatziki, pickles, tomatoes and thai hotsauce. Put everything on a pita.

I also make a vegetarian chilli using broccoli and cauliflower instead of meat.

Red Beans and Rice w/ out sausage.

Vege Lasagna, just leave out the meat and add zucchini and artichokes to your sauce.

quinoa with pesto (see link) and mixed roasted vegetables...replace chicken broth in recipe with vegetable stock, if necessary.
