i stew eggplant in a roux with tomatoes onions bellpeppers garlic and add salt pepper and cayenne in a wok and serve over jasmine rice.
or you can do the same thing without the roux and add thyme for a ratatouille type dish.
are you familiar with indian food? curry paste with lentils or eggplant with basmati rice.
i also like to make quesadillas with onions, black beans, tomatoes, peppers, and a little cheese. you can add mushrooms to that too so its a little more filling. I use greek yogurt instead of sour cream because its no fat. can do a side of spanish rice.

She is a vegan if she doesn't eat eggs(which you can inform of this litle fact) are unfertilized and have been for many years.

Portobello quinoalaya:
grill portobello mushrooms, cut into bite-sized pieces. Saute' trinity in seasoning of choice, splash of soy sauce, and add mushroom pieces. Add quinoa and water. Simmer til done.
ETA: You can substitute veggie stock for water if you want a little more flavor, and you will have a want for more flavor.

Very simple veggie bean soup. One lb navy beans, two onions diced, three or four pods of garlic, three carrots sliced three stalks celery diced, two cans of Del Monte original recipe stewed tomatoes, salt and pepper for seasoning the end. Cook the beans until well done along with all other ingredients, then puree it all, use veggie stock to thin the mixture out to a "cream of" consistency.

Please tell me this is just you, and your girlfriend isn't this dumb. The only eggs that are baby chickens are the ones we aren't eating anyway. Female chickens can't reproduce without males. Female chickens lay the eggs we eat without any male "help". I can't believe I'm having to explain this

im not a vegetarian but ive been trying to incorporate more meatless meals as part of my weight loss. if she is staying overnght, i was going to suggest quiche for breakfast, but she doesnt do eggs.
you can do a tofu scramble that is similar to scrambled eggs and mix it with beans and onions nd serve it in a tortilla. ill have to find that recipe for you!

this is a recipe I've made with my girlfriend a few times... it's a sweet potato and bean burrito
I like to sub black beans in and increase the bean to potato proportion, but it's pretty good

has fajitas been said? Just prepare the peppers, onions, etc the same way you would if you were making with chicken, shrimp, or beef and omit the meat.

Grill some squash, zucchini, onions, and maybe some portabello mushrooms or eggplant, slice into strips, and serve over couscous.

if you really need no fish, do a red beans and rice w/ no meat. Mushrooms are a very good compromise. Oyster and Chantrelle mushrooms are my favorite for their texture and flavor
