My ole lady whipped up some Chicken n Dumplins

for dinner this evening.

Homemade and just like grandma used to make. It was a pleasant surprise, as I have not had this in a good while.

Love that stuff. Don't get to eat it that much but one of my favorite meals. Post the recipe she used.

here is what she sent me.


quote:

2 pounds of chicken breast
2 cups bisquick mix
2 1/3 cup milk
salt and pepper to taste

boil chicken in a big stew pot add salt and pepper to the water as its cooking
once the chicken is done pull out of broth and let cool. break the chicken up in small peices.drop the chicken back into the boiling broth.
mix the 2 cups bisqick and milk together to make soft dough. you make two seperate bowls of bisqick mix.the first bowl drop spoonfuls into the boiling pot let it boil for a few minutes then stir, it will break up the dumplings to make a thick soup. once it starts geting thicker take the other bowl of bisquick mix and drop the spoonfuls in the pot. do not stir. lower the heat to medium and let cook about 10 min.

Squirrel dumplins are the best IMHO. Rabbit is nice too, but I still love pretty much any kind of dumlin'...

i'm with Rohan2Reed. I have never understood the appeal of chicken and dumplings. no one in my family (cajun) cooked it, so I didn't grow up eating them. i've tried them a few times and just never enjoyed the meal--very bland and i have a hard time getting past those slimy, tasteless dumplings.

i do love Donald Link's recipe for "cajun" chicken and dumplings but that is probably because they resemble C&D in name only--taste and look very different from tradition C&D...
