Had an 8oz.filet at Copelands last week. 19.95 all of June, very good.

I have worked here for almost two years and it is one of the best steaks i have experienced. Excellent price for the think cut of meat. Might be a little pricey but. as a server there im going to recommend the garlic filet, Medrare, with garlic sauteed crawfish on top!

I know several years ago they were really pushing the quality steaks and I had some very good ones.
The last one I had last year didn't seem so great, but it was not a filet.

Why would you screw up a filet by dumping crawfish on top of it? That's a cut of meat that should stand on it's own.

If I had to guess I would say it would be rubbery bland asian crawfish to help add to the insult.

actually its gulf crawfish--oil free and it actually test delicious.

I ate a filet there a few months back. I wasnt expecting much but it actually was pretty damn good.

I enjoy Copelands filets. How exactly do they prepare them? I'd like to try and replicate at home.

A filet?
The one cut of meat with the very least amount of flavor? The one cut of meat most chefs choose to provide a sauce for because of that lack of flavor? Its a tender cut its certainly not a cut that stands on its own though. There is no fat to allow that.

turn your oven to 450.
stick a cast iron skillet in there...
take your steak.
rub some olive oil on it.
then salt, pepper, and garlic powder... cover both sides.
let the skillet get really hot....
turn on a burner on your stove to high... take the skillet out put on burner put the steak on there let it sizzle for 30 seconds. flip it let it sizzle for 30 more seconds.
then put it back in the oven while its on 450.
i would say 1:30-2:00 on each side and you're done... depending on how you like it cooked and the cut of meat more or less.
