Fried eggplant

Give me your best recipe. My mom LOVES the fried eggplant at Deano's in Laf and she's trying to replicate, but can't pull off the taste...what say you?

My own method:

Bread Crumbs
cayenne
dry oregano(one of my favorite herbs)
dry basil
shredded parmesan cheese
grated romano

Dredge in flour then to egg wash then dry batter. Fry until golden brown.

Note: While slicing put pieces in an ice bath.

I use Louisiana Shrimp Fry mix.

I dredge in the mix then to egg wash then back into the dry mix. Fry until golden brown.

I usually soak in salt water for about 20 minutes and then let them dry. This helps get some of the bitterness out

I don't remember the exact times but I usually just coat with flour, eggwash, more flour, then put a little bit of olive oil on a baking sheet and cook a few minutes per side. I don't really fry them.

I read somewhere to salt your eggplant slices and let drain in a strainer for half an hour. This draws out the moisture.

I tried it a few times and they seem to be alot less soggy than the eggplant I used to fry for my eggplant parmesan

My neighbor disolves a little corn starch in the egg batter, I might try.

Makes them to soggy IMO

Want to get the mositure out, not add more in.

try just salt and draining
