Just got off the phone with a guy who's doing my company's crawfish boil. I asked him about what others have said over at different crawfish places about why they can’t put the seasoning in the water (claimed it's against Texas Health Codes)
to quote the guy "That's total bullshite. I've been doing this for over 15 years and I've never heard a thing like that" Actually, being that he's from Maurice, it was more like ting instead of thing.
Sooo...WTF is up with the lying liars who don’t season the water?

Putting seasoning the water wastes a bit more seasoning. Seasoning the crawfish in an ice chest or after boiling or whatever they are doing is an attempt by a tight arse to save money. Nothing more.

some, and I repeat SOME county health departments have given concern about the DUMPING of the water when the boil is done
they really dont give a shite about the water as long as it's in the pot, but there are a gazillion "water runoff drainage" bullshite ordinances for restaurants
it's stupid - I just told the health inspector that I was dumping it out in the mop sink, or they were more than welcome to hang out till midnight when I started cleaning up to check

Why can't they just dump all the seasoning in a couple minutes after the seafood gets in?

This is all interesting, because 2 years ago at the alumni crawfish boil here, the bugs were awesome and tasty...
same guy cooked them last year, and they were bland and tasteless!!
Now I am thinking that some insane Alabama code is to blame!!!

Well I've checked with my contacts inside the Houston Health Department, Harris County Health Department and Texas Health Department on this subject.
So far I am only met with comments that it is not against any written code per se. I tried to pursue the question but was met with the same answer. I even tried to get an FDA person involved but they said it is a state/local jurisdictional issue. WTF
I asked if anyone had been cited for putting seasoning in the boil and was told to go look it up in public records.
Until I can get some firm evidence that there is a legal issue I call BS on restaurants claiming they can't season the boil water. I simply think it is an issue of cost or reusing the water for multiple batches or inconsistency in the kitchen.
I'm going to continue trying to get evidence. My next step is to contact some folks in Dallas or San Antonio Health Departments and see what they say.

How do they make soup? Really, this is stupid. Whoever said they can't season water is a liar. No further research or questioning is needed, they lied! It is that simple.

I have been living over here in the DFW metromess since '94 and everywhere I have been to eat crawfish, they always do it the same way. I have come to the realization that, 1. they are LAZY!! , 2. They don't know how to do it properly, and please remember this, that i am not a racist person, but when most of your kitchen help do not speak good english they are going to cut corners and do it the cheapest and quickest way. Most people over here that are native texans think that our beloved cuisine is supposed to be burn your taste buds off hot. As far as any health code violations in regards to boil water, that is someone just blowing smoke up someones butt!!!! It all boils down to this: time + money = laziness and definitely not caring to do it right and properly. I have had a boil several times at my home and all of the people that have come, tell me afterward that my crawfish is the only crawfish they will ever eat in TX!!!!!

I sent mine back last night at Pappadeaux's.
Usually it's ok, but last night my wife complained.
I think they just try to make it too fast
with out letting it sit long enough.
My 100qt pot is on it's way!!
