Look up stitch and glue boat building. You'll want to use Okume or Meranti plywood.

If it's getting glassed and epoxied, for a small boat, doesn't it really matter?

I'm going to build an 18 foot jonboat with a 5' beam at the sole. I'm going to use shitty pine plywood, elmers wood glue max, some canvas, and stain it with beagle blood.

As a kid, I built one with my dad. We were told to use luan as it was a little stronger and had all the knot holes removed and filled with a puddy or epoxy. Worked great. Treated it with linseed oil and then roughed it up and painted it olive drab.

I made a pirogue with exterior plywood. I did it the stich n glue way. I used the free plan on bateau.com. They call it a 14' Canoe.
It tracks really well and seems tippy to me, but my son has stood up in it no problem. I rigged it with a Kayak seat/paddle and fish the ponds once in a blue moon. Mostly it hangs under my balcony by the deck. It is heavy as hell because the exterior absorbs epoxy like its going out of style.
If you are going to use it much at all, build it correctly with the right materials.

Similar to a canoe. Usually smaller with lower walls. Good for traversing the shallow bayous and navigating flooded cypress swamps.
