Croaker is pretty sweet fish.

Redfish is good only when real fresh, otherwise it gets "fishy".

I love fresh redfish, blackened and "on the half shell".

Fried croaker beats fried trout, IMHO.

There's a donut shop by my house that make Hog Head Cheese Kolaches with Bourgeois Hog Head Cheese ...... I bought 6 to bring to work one day for me and a couple coworkers...... They didn't make it.

Crave across the street from Becks.

They call it boudin stuffed but they actually use hog head cheese.

Becks Bar in Raceland? Shite I could've picked some up yesterday when I went get one of our company trucks from Earl's Transmission. Guess I will wait till Friday. I'm definitely gonna try it though.

A salesman brought bourgeois turkey cheese on his normal run yesterday. I commented that the invented of head cheese deserves a statue and a medal.
