Lobster year's ago & redfish until Chef Paul blackened a piece both were considered "poor man's food" In fact refish was considered a trash fish until then

We make about 5 pans at a time. Use pork loin and Boston butt. Use Knox gelatin to harden it.
Lots of black pepper and lots of green onions. No chunks of fat. Solid meat.
It's delicious!

Durrands in Mansura makes the real " porc tête du fromage ", hog head cheese. Louisiana hot sauce, saltine crackers and a Ultra. Any time of the day.

Naw,, we just sit them on the grill to let them set up,,, before taking them to fridge. If it's cold outside, we just leave them outside..
