breast em all out and make sausage at the end of the year. grey duck, spponbill, squelers, even some mallards get thrown in sausage pile. Got about 50 lbs right now.

been doing it for years. i just tell the processor 60/40, and its a tad drier than venison or pork sausage but a great flavor that works well in gumbos etc. gonna get some jalapeno and cheese summer sausage, jalapeno and cheese slim jims, and tamales made from it as well. Buddy has a bag just as heavy and we gonna take it after our last haul this weekend.

smoked sausage and goose gumbo or make sausage out of them (ya cut w pork)

A padnah tried to make jerky out of them once ... it was meh but the dog liked it, maybe w/ the right marinade/spices it would work but venison much better

Spoonbills?!?! Shew, after the teal, those are the next ones I pick to pot roast- unless there are woodies.
