Pan fry with butter, a little lemon and thyme.

Or smoke it whole and mix the meat with cream cheese, dill, and a little lemon. Best dip evar!

Also like it lightly blackened.

Throw the nasty things back.

If you must eat them either foil pack with lemon, butter and herbs.

If they are decent sized 20 inch or better a cornmeal/flour fry isn't bad.

Little butter and seasoning in tin foil on a camp fire in front of your tent after a day of fly fishing in the Smokies. Although you should of went higher elevation and got some brookies.

Saw a fishing show years ago where they buried a huge lake trout in the sand and built the fire over it. Let it cook while they went back out for more. Looked like a great day. Always jealous of them boys on that show.

Hardhead the poster has the recipe, but basically, he smokes them. Then de-bones as much meat as possible and mixes it into a dip. Looks like spinach and artichoke, but again hopefully he'll see this and post the recipe. Eat it with any kind of cracker...

I've had them pan fried, baked, etc.,... The dip is the best use of rainbow trout meat in my opinion.
