I would go with 2 Elite 7's or 2 HDS 5's, or one of each... both units are $400-$500.
I never bought into the down and side scan until recently. Was fishing a local lake and lost my gopro, suction cup failed, or I mounted it on a curved surface . Regardless, borrowed a buddys boat with down and side scan, side didnt help much, but the down gave me a perfect picture of a little square, dropped a few boueys and took a swim, found it in less than one hour total. Now I knew about where it was 20-30 yrd stretch of bank but still I was impressed. Next unit will likely be a Elite 7 for the trolling motor, have an HDS 5 on the console.
To me Lowrance are the easiest to learn and operate. Ive only had Low and Birds so take that FWIW.

Garmin 541s. This is a great unit that is very easy to use.

have had variety of plotter/sounder units and used to work in marine retail. Garmin is far and away more user friendly and for your type of set up I'd go with what was mentioned above here, a 541S or or get a larger screen if you want but it'll do what you want as far as GPS and fish/depth finder.

I now run a Lowrance HDS 7 Gen 2 on my bay boat but 99% of that reason was for the Standard Mapping E-Cards to be used in the marsh. If not for that, I'd still have a Garmin. For using on a lake like Toledo Bend, just check out the various software packages that come with the units and get one preloaded or with a chip to pop in. Should be able to get all set up for under $750 or so, including transducer.

If it were me I would buy a lightly used 998 or 998 Humminbird. You could probably be in the 800 range pretty easily on a used one.

Is there a West Marine near you? I wouldn't buy from them, but you could go check out thier displays. I find certain interfaces more "in tune" to how I want to use them. Others could be great products, they just don't do it for me. It's nice to be able to play, before you pay.
