Best Smoked Deer Sausage processor around BR?

I found an old thread but it was locked. I've processed my own for years, but am ready to start having the smoked sausage done by a professional. I'll have it deboned and will only be bringing around 20 lbs. I usually process the rest my own into burritos, summer sausage, and cutlets.

it is a little bit of a drive, but the best sausage that I have ever had came from the whitetail butcher shop in Independence, LA...I know many people who drive there from Jackson, MS and Monroe, LA...

Bergeron's in Port Allen.

Heard Tee-Wayne's in Gonzales is very good but haven't tried it yet. (He's won the Jambalaya Fest a few times and all his other food is excellent)

Tim leblanc's at leblanc's processing in morganza, La.!!! Short drive but is the best processor since martins quit in the late nineties

Bergeron's is pricey, but their green onion and pepper jack smoked are really good. For regular smoked I'm a big Benoits fan. Like both better than what I've had from Vines.

I haven't been in 8 years, but the last one we brought was disappointing. Also was told that you don't get the same neat you bring in. And they broke my coola.

I brought some to Day's. I was not very impressed. I have brought 2 deer to The Cook Shack. The Cook Shack is the best I have found without question.

I used benoits last year because its extremely convenient for me. People who i gave the jalapeño cheddar sausage to said it was some of the best theyve had. The casing they use is great. It isnt too thick and has a nice snap to it.

Just don't expect to get "your" deer meat back! They just give you back the weight of sausage you're due, hair and all.
