I’ve usually heard

Dew-gahs

Du-gus

Outside of Louisiana.

However, there seems to be a contingent in Louisiana that insists on saying

Du-gus

In my opinion I’ve always thought the correct way to say it is

Dew-gah

Is the surname of certain descent? Is there an official way to pronounce, according to its’ heritage?

Depends on where you're from. Some people pronounce the s (dew-gahs) & some don't (dew-gah)

It's never "due-gas"

I believe the majority in our area use doo-gah

I always got a chuckle out of Domingue

Every one I ever met was doe-mang, until one uppity sumbitch pronounced his doe-ming-gay. LOL

It's really up to the person, isn't it? How do you pronounce Trahan, Simon, Martin, or Clement? French or English pronunciation? Which local dialect of French if you are going that route?

Around Lafayette, it would typically be Do Gah,

I also know people who pronounce it Do Gahs, a few Do Gus, and I knew one guy who pronounced it Duh Gus. His name so I called him Duh Gus.
