Well, it's a strategy that mostly backfires and can kind of screw up the flow of the game.
Lots of categories are ambiguous, so it's best to get the lowest dollar answer to get a feel for what the answers are telling you. The people who jump for the big money first to either build a huge lead or to find a daily double usually answer incorrectly because they didn't understand the category. Then, nobody gets the money.

It's a strategy that backfires if you aren't a great player. Most of the recent great players use the strategy because it is the better option.

I was on the Scholar's Bowl team for geography, history and sports. Actually was on the College Bowl team at MSU- but that's a different story.
In high school, the 3rd Quarter was usually lightning round. One time our category was college nicknames. They named 10 SEC schools and I easily rattled off the nicknames without consultation.
The next question was something like, there are 125 quiz bowl teams competing in a tournament. How many matches are required in a single elimination format to determine a winner? I quickly answered 124.
As easy as that was, it intimidated the hell out of the other team. That many sports-type questions hardly ever happened.
Still pissed about the round of 16 in the 1995 Alabama Scholar;s Bowl championships. We were a small 2A school and ended up in sudden death with a large 6A Huntsville school. The question was:
"This adjective describes a form of government ...."
The other team answered and said "democracy," in which we all stood up buzzing at the same time because they asked specifically for the adjective, democratic. The judges awarded them the point, advanced them to the next round and we were sent to the loser's bracket pissed off.
2 and Q for us that day.

Of course. Unless you're Roger Craig, who just answers everything and leaves you in the dust. The dude is incredible. He made Rutter and Jennings look like amateurs.

Roger Craig holds the record for most in a day ($77k).
In the Mecca of Jeopardy tournaments, it was Ken Jennings (most consecutive days), Brad Rutter (most total winnings on Jeopardy EVER), and Roger Craig (most in a day).
Two day tournament with aggregate totals determining the winner. Prize? 1 million bucks.
Day 1: Roger was schooling them. It was in the second round and he had about 17k with Brad in second place with 8k. Jennings had 4k. Roger got a Daily Double and bet it all and got the question wrong. Brad won day 1.
Day 2: Same thing but Jennings played better. Still, you could tell Brad and Ken were no match for Roger. Roger was winning big and, again, got a daily double and bet it all. He got it wrong again.
