Like the others said, they're smaller too.

Not necessarily. They have 3 different sizes of chinese crawfish tails. 80-100, 100-150, and 150-200. Supermarkets usually sell the smaller ones because they are cheaper.

After you put them in an étouffée, cook them, mix then with all the other seasonings, etc....people that act like they can taste the difference are fricking liars. They prob also have some La related decals on their trucks, never graduated college, and have never lived outside the state.

Truth. I remember reading somewhere that they are genetically identical. The people claiming a difference are the same ones who say Mr Pibb and Dr Pepper are different.

Don't put them in the étouffée until 15 or so minutes before you serve, assuming they aren't frozen of course. They will shrink if you let them simmer for too long.

I've had Chinese several times due to living in dc. They are generally packed with pork fat, which is why they taste different. I haven't had them in years.

I've been to your state. Smelt of corn dogs, unwashed arse, and desperation.

Don't you Chiklit-brained lower life forms know that the two places you would find your beloved corndogs (besides your own Sunday dinner tables) in huge abundance are the Texas State Fair and of course, where the CORN is - Nebraska, Iowa, et al.

It really is quite embarrassing for you stooges to STILL hold onto and try to make some sort of bizarre ethereal, existential link between corndogs and Louisiana/LSU - where the best food on earth can be found on Saturday afternoons on campus and in the countless restaurants and hotels.

And I've been to your state. Smelled of Skoal drool,
tattoo ink, burning crosses, trailer hitch polish,
tree poison, adult male sweaty scrotums with hamburger relish on them, Home Depot yellow tape,
Theatre popcorn, 1971 Ford Econoline burnt oil, Strawberry Hill-soaked panties, Stripper Pole grease, time clocks, greasy towtruck overalls, unborn mucas membrane, regurtigated possum afterbirth, and auto parts store car air freshener.

You asked for it.

Now I see you were kinda joking....

Wellllllllllllll. So was I.....

Honestly, when that much butter is used, the crawfish is really there for texture.

I was in the seafood sales business for 25+years. I sold hundreds of thousand of pounds of Chinese seafood. Mainly shrimp and crawfish. I will not knowingly buy or eat ANY food from China (they also import a lot of rabbits). I won't buy or eat anything from any far east country or middle east for that matter. If you saw the pictures I did you wouldn't either.

You eat a bottom feeding animal from China, and you deserve all the diseases you get. No chinese food. Period. They have zero safety regulations, and dump waste right into their crawfish and tilapia ponds.

I'm in the same boat as you, so we tried making etouffee with Boudreaux's (Chinese) tails. We noticed a big difference. The Chinese ones don't have as much fat (yellow gunk) that is needed to enhance the flavor in my opinion.

I noticed this years ago. They think they are supposed to not include the fat in the packaging. Not good for etouffee.

ETA: You can probably get 3 packs/lbs of tails shipped to you from Tony's for ~$45. You pay $10-12.99/lb in Louisiana.
