So now it's racist to call Mexicans Mexican?

How damn far is this PC bullshite gonna go? I am by no means politically correct in any situation, but this old woman (late 70s) SJW just chewed me out at a little kid's party for saying the "M" word. At first, I thought she said "N", but nope. I was talking to my buddy and my exact statement was, "Aw man, this week has been fricking busy. These Mexicans have been digging up under my house to raise it". No problem with me saying "frick". She then proceeded to chew me out because I said Mexicans. At the end of her 5 minute long tirade, I got to tell her that I am half Mexican, and the guys working under my house were indeed from Mexico.
I guess this shite is infectious and has started moving into the older people's minds now. It is annoying enough to make me want to purposely say racist things in front of people just to piss them off. I haven't ever met an old woman SJW.
Is there any solution to all of this PC garbage? I am sure as frick not gonna hold my tongue IRL when I feel like saying something, but this all needs to end somewhere. These mother frickers are just annoying, and need someone to put them in their place, or they will just keep going with it. Flags, TV shows, words, pictures, statues, chick gets drunk and regrets fricking some random dude, no corporal punishment, etc. They just want to take everything.
*I don't know a single Mexican that would like to be called Hispanic. I also don't know a single guy who would rather be called Caucasian than American

The biggest problem that people are getting in their mind with all of this shite is that they have no idea what Racist actually is. If a black guy robs a store and you say "we are looking for a black guy wearing..." that is now called racist. It is a description of the guy, not racist. There is no negative in it except the guy who did it is a piece of shite. it is a statement with racial tones, not racist.
People don't understand the word racist and just throw it around now.

Well, I'd do it in any other situation, and have done it several times. Problem numero uno was that she was an old lady. Problem dos is that I was at a kid's party.
It seems like the people who are most upset by what I say have absolutely no link to whatever "racist" thing that just came out of my mouth. This old woman was just some white lady from Franklinton
