My fav random airport breakfast is Qdoba in Hotlanta.

Eggs, chorizo, potatoes, queso, and salsa breakfast burrito.

Qboda isn't bad but if you give Popeye's breakfast, I'm in.

Five Guys has a really good fried egg breakfast sandwich in airports but it's stupid expensive.

ETA:
There was a Popeye's in Lafayette that was open for breakfast, I think maybe the one with the buffet. I don't remember if they ever did anything besides biscuits but that's all I ever remember getting.

They have some pretty solid random Mexican places in Houston and Dallas airports but I try not to shite myself on long flights.
