Freebird? Dazed and Confused? One?

For influence nothing beats Eruption, the solo that launched a million guitar slinger wannabes.
Jimmy Page's solo on Stairway to Heaven is also pretty iconic.
For my own preference it'd be Stevie Ray Vaughn's solo from the live version of Texas Flood on the Live at the El Macambo video and also on the Blues At Sunrise CD.

All finger picked too?
Comfortably Numb is up there for me. Incredible solo. No speed needed. All feel and Blues.

This is a pretty solid list, I'd maybe substitute Time or Money by Gilmour/Pink Floyd and Something by The Beatles - the phrasing in that solo is perfect.
ETA: Also, Little Wing by Hendrix, another perfect solo.

I think melody and emotion are very important when composing a solo.
"Mr. Crowley" may be the most complete, most tasteful and best composed solo ever. It just shows a masterful knowledge of the fretboard and Rhoads really put all of his emotion into it fusing classical scales and D Minor Pentatonic licks.
"November Rain" is another great composition that tells a story. You can almost sing it.
"Bohemian Rhapsody" first solo although short, is fantastic for how it fits the song and lifts it. "...sometimes wish I'd never been born at all!" Guitar solo. It's perfect and it builds to a perfect climax.
"Comfortably Numb" (there could be an entire Gilmour section as no one can portray as much emotion in such symplistic form) - pretty iconic. Basic B Minor Pentatonic that he explores all the intricacies of. The progression of the song makes you feel like somethings about to go down, something intense, and then that first bend just launches it. It's makes you feel like you are ten feet tall and bulletproof. "Time" and "Young Lust" fit perfect as well.
"Stop" by Joe Bonamassa. I know he gets alot of hate on hear for bringing a machine like precision style of guitar playing to a genre that is founded upon raw attitude, but the main lead in this song is so awesome. It just hits you in the chest and makes you want to weep. I think it's the closest anyone has every come to expressing heartbreak without putting words on a page.
"Life Without You" by SRV. SRV in a nutshell for me. Unbelievable chops and raw emotion utilizing different pitch bending on one note.
"Stairway" is beautifully composed too. I cant not mention it. "Hotel California" as well. (edited)
This isnt including any of the stuff that is literally an entire song of tasteful lead playing like "Marooned" by Gilmour, "Tender Surrender" by Vai, or "Electric Gypsy" by Andy Timmons.

I don't know about Top 10, but this gem from Lindsey Buckingham should be near the top:

It's a shame that Don Fedder does not get more widespread acclaim for hotel California. He wrote all of the music for that song and then Henley and Frey put words to it. Those two pretty much railroaded him later especially on the reunion tour. Glenn Frey seemed particularly proud of it on the documentary.

Poles Apart - Pink Floyd doesn't get enough credit.

Veterans of the Psychic Wars
Buck's solo on this live version of Veterans is in my opinion the best solo ever.

The Tribute version is even better.
