Black Sabbath might not be the greatest debut album in terms of song quality per se, but it is arguably one of the most impactful records in music history due to its creation of an entirely new music genre.
As another poster mentioned, it's hard to compete with Led Zeppelin and Are You Experienced. The former is a near-flawless performance that arose during the birth of hard rock, while the latter signaled the debut of one of the greatest musicians ever.

What really stands out about Are You Experienced? is the sound throughout the album. What other rock/soul artist sounded like the Jimi and the Experience in summer of love 1967? Cream and the Doors were stuck in 1966-style rock, whereas Hendrix was making hip-hop beats on the title track and blowing people's minds with the heaviest rock people had ever heard to that point. That debut (along with Sgt. Pepper a month later) influenced the whole gamut of psychedelia that followed.
Caveat: why isn't Jeff Beck's Truth mentioned among the greatest debut albums in history? It's literally the first heavy metal album and all the 70s bands and guitarists swear by it. The Beck/Stewart dynamic was so compelling and clearly set the blueprint for Jimmy Page as he was looking to replace the remnants of the Yardbirds with the same manager no less! Can only imagine what those 4 musicians were like live in 1968 with Waller as drummer.

I know it is cliche'...but I loved Garth Brooks' debut album.
Staying with a Country theme...I also liked Strait Country from George Strait.
Maybe I've just got bad taste in music...but I can listen to these 25-35 years after their release, and still dig them.
