Agree with you on Plastic Ono Band. It's arguably Lennon's best work, surpassing The Beatles because it's a cohesive work.

Others:

Hendrix first album, mentioned once before.

Modern Lovers. First and only album from the original band is great.

The Velvet Underground & Nico.

Elvis Costello - My Aim is True.

Elvis Presley Sun Sessions. His best work.

My best friend was in Razor White with Phil when he left for Pantera. Pantera put out some shitty metal before Cowboys. Amazing how well they put everything together for Cowboys. And Vulgar might be my all time favorite album.

Power Metal is a legitimately great album and features some of Diamond Darrell's best work. Not to mention Phil's vocals were still good.
