Because the refs that have been scheduled for their next couple of games probably have listed themselves as "unavailable."
Not all refs took part in the strike. Some games will still be on, but most will be postponed.
ETA: the higher-rated officials who do the 5A games probably all have listed themselves as "unavailable." So teams like Catholic and 5A are probably postponed until further notice like you said.

Are you just blindly backing the refs or are you a Barbe supporter? It was so bad Rivals wrote an article that destroyed the refs.

And I doubt that the guy who wrote that article for Rivals even saw a tape of the game, let alone actually went to it.
