Zydeco Green Beans

My mom made beans this way and called them Zydeco Green Beans. How many of you eat green bans over rice like this?

i dont make that but it usually happens around thanksgiving time on my plate when i mix everything together

would definitely eat whenever though

those beans look as though they were cooked down a bit ... will look this up ... looks quite tasty ...

We just called it supper.

I was a teenager before I realized that most people didn't eat fresh green beans over rice.

My daddy always had a nice garden and momma would can what we couldn't eat fresh.

These were frozen green beans from Sam's. They don't last long when I make these here. Lol..... I usually start with cooking down some diced yellow onions(no measurement but for the most part more is better than less)Add andouille and diced tasso, chicken stock(chicken base and water is fine)and bring to a light boil. Add green beans, salt and pepper(again I simply "eye" it, put a lid one and basically smother until beans are tender. Simple and delicious. There are recipes that have celery and bell peppers but I find simply onions, salt and pepper with good andouille or smoked sausage is just right. Now many believe this is just a side dish as green beans but served over fresh hot rice it is absolutely a gourmet meal. Mmmmmm.......... Thanks mom!!!!!!!!

Oh yeah, fresh green beans kicks this up about 200% but cooked right I'll take it any day of the week.

Oh, there's gravy from the green beans. I add extra stock to make that for just this reason. But, yes, a good rice and gravy gravy makes this even that much better.

Had this all the time growing up, I cook it every now and then, it was never called zydeco beans

My folks made them with salt meat, onions and time. Never put them over rice but I think I'm going to try it.

As easy as this is to make and so delicious there's no reason not to enjoy it more often and I should make it more frequently than I do. The wife and daughter here will sometimes just heat up a small bowl any time of the day. I always tend to make it in big batches of 4 or 5 pounds when I do make it and usually I add small cut up new potatoes when I make it but forgot to get some yesterday.
