What's good about raw sushi?

I am very Leary of raw or undercooked fish but have always wanted to try raw sushi. Is it as good as people make it out to be? what does it taste like?

You can take the word of others all you want but until you try it for yourself you'll never really know. Not all sushi contains raw fish. You can start off with a shrimp tempura roll or snowcrab roll and maybe a try a few others that contain a little amount of raw fish.

Fresh Copper River sockeye salmon with a squirt of lemon or fatty tuna is so satisfying, from the texture to the flavor. It's hard to explain, but if you love fish in general, really fresh sushi is something you should enjoy.

I think this is why OP specified "raw sushi". I think he has probably tried tempura and veggie rolls before.

I'll keep trying sushi, but I haven't really found any that I like. I've had a couple of fusion meals that I enjoyed.

sushi is the sour rice.

sashimi is raw fish.

not all sushi has sashimi in it

Quality raw fish is amazing. Different fish taste different. Scallop (hotategai) is buttery soft, sweet and delicate. Uni is really rich, briney and creamy/custardy. Mackerel (saba) is really good if served fresh, but it has a strong flavor and most places don't have very fresh stuff so it gets pegged as very fishy tasting. Same with Horse Mackerel (Aji). Flounder (hirame), Snapper(Tai), and Yellowtail (Hamachi) are other milder fish though at cheaper places are farm raised.

I would go to a nicer place and start off trying Salmon, Scallop, Snapper, and Yellowtail nigiri.

Raw fish is something I have to be in the mood for, but when I am, nothing can beat a buttery slice of raw salmon with a light dab of soy and wasabi.

The first time you eat it, you likely won't be impressed.

You will crave it.

I don't know what it is, but I can literally eat tuna straight out of the fish now.

I would eat raw tuna and salmon everyday if i had access to it fresh. Don't give me that fried rolled stuffed with cream cheese bullshite.

Dead centered my experience. Never thought I'd like it. Can't live without it now.

And yes, I've eaten tuna on the boat. quite possibly one of the best things I've ever eaten.

If you're skeptical, have a Saporro (Japanese beer) or two and some saki. By the time the sushi gets to the table, you'll be ready to throw down.
