I like to soak them and the sausage in vinegar with a touch of crawfish boil overnight. They are excellent.

Run them through the food processor with some onion, bell pepper, salt, black pepper, a little bread crumb and an agg, then form patties and fry in a little oil. Makes a great shrimp patty.

Also do the same without the food processor action and roll the mixture in an egg roll wrapper, fold and roll into egg roll shape and fry. Makes a great shrimp egg roll. If you have enough to make a pile of them, they are even better. We just never have that many left over.

I love shrimp salad, dice them up and mix it into mayo, mustard, celery, garlic, onion, a decent amount of nu-nu’s, and a dash of crab boil.

If you want something spicy, try aquachile. The Mexicans typically eat it with tortilla chips, but I like saltines.

Shrimp Balls or Patties

Ingredients:

2 lbs headless peeled boiled shrimp, minced (couple of seconds in a food processor)

1 large yellow onion, minced

1 large bell pepper, minced

2-3 stalks of celery, minced

4-5 heaping tablespoons mayonnaise

2 eggs

1 stick butter (melted)

1 teaspoon dry crab boil seasoning

1 can (15oz) of plain unseasoned panko bread crumbs

Directions:

1. In a sauce pan melt the butter and throw in the onions, celery, and bell peppers, and cook until onions turn clear then put in refrigerator to cool.

2. Put the eggs, mayo, and crab boil seasoning in a large mixing bowl and mix in.

3. Now add in the cooled down butter and onion mixture to it and mix in well.

4. Now stir in the shrimp meat first and then start to add in all the bread crumbs a little at a time.

5. Shape mixture into balls or patties and place on a cookie sheet.

Makes around 16-20 or so 2" sized round balls or 3" round patties.

Cooking:

pan fry patties with pat of butter until golden brown.

for baking just place on buttered baking pan and bake @ 350 degrees for 20 minutes until golden brown, then flip over and bake for 10 more minutes to brown the other side.

We chop them up fine and mix with some diced celery, mayo, and maybe some seasonings. Serve on a hotdog bun (like a lobster roll), eat with crackers/chips, or put on lettuce.

tasso shrimp cream sauce over pasta


stuffed artichoke pirogue with tasso, bread crumbs, onions, shrimp. Since artichokes are expensive now, substitute eggplant

So many things. Eat them cold. Make an omelette. Make a shrimp salad (a salad with shrimp on it or chopped up shrimp with mayo and green onions, etc), fajitas. Shrimp Alfredo. So many things.

Get some rice papers and make spring rolls. A little peanut sauce to dip in and you are good to go.

Shrimp dip

1 block of cream cheese
1 cup mayo
1.5 lbs peeled shrimp
3-4 green onions diced fine crackers
Creole Seasoning to taste

Mix the mayo and cream cheese well, add your shrimp and green onion and mix that well, eat with some crackers.
